VegWorld Magazine interview with Mimi Kirk. Mimi is a living example of eternal youth. Voted PETA’s sexiest vegetarian over 50 (in her 70’s!!!), she is more youthful, radiant, and vibrant as some people more than half her age. Mimi shares how a vegetarian diet has changed her life, tips for eating healthier, and advice for those just starting out on a plant based diet.
Mimi’s been seen on NBC, KUSI, Fox and The Doctors and has been interviewed by countless newspapers, magazines and online blogs. She is known around the world and has appeared on the covers of Get Fresh, a UK magazine, LUX, a Portuguese magazine, and EVA, a Bulgarian magazine. Kirk appeared on RTL, Germanys largest TV station, and was interviewed on a Bulgarian TV show. She appeared in a documentary called Eternal Youth to be released shortly and is scheduled to appear in another film documentary to be released later this year.
Mimi is the Author of “Live Raw: Raw Food Recipes for Good Health and Timeless Beauty,” and “Live Raw Around the World,” which are both published in German. She lectures, consults, and gives raw food demonstrations. Mimi can be seen on YouTube where she teaches her viewers how to prepare delicious raw food dishes. She manages her large online social network and is passionate about helping others learn more about eating healthier and living longer.
VegWorld (VW): What was the critical moment in your life that made you decide to give up eating the Standard American Diet?
Mimi: I gave up animal products when i realized I was eating flesh from animals. I was about 32 at the time. In my earlier years there was not as much packaged and processed foods as there is today so the SAD of today is different than when I was growing up. There are more chemicals in food today, GMO food and fast food restaurants opening at a steady pace. All these things are considered the Standard American Diet of today.
VW: What is your current diet like? What works for you?
Mimi: I am a raw vegan. I start out with a daily green juice or smoothie, and love big salads. I’m always preparing something new. I buy organic, only eat when I’m hungry. Love making aged cheese, breads, crackers, zucchini pasta, lasagna and desserts. Raw food is really fun to create and it seems to keep me very healthy.
VW: How has eating a vegetarian diet changed your life?
Mimi: I owe my good health to my diet. I’ve been a vegetarian/vegan and now raw for over 40 years. I’ve escaped all the diseases my family had, and I feel like I’m getting younger rather than older. I just feel more energetic and happy.
VW: What have been some of the drawbacks or pitfalls to maintaining your lifestyle?
Mimi: I think I’m lucky as I’m not sure I’ve had drawbacks or pitfalls. I don’t make myself wrong if I eat or taste something cooked. I prefer to eat raw vegan because it makes me feel healthy, it’s good for the planet and good for the animals. That’s enough to keep me eating this way. When traveling there have been times like when in India that I found it difficult to eat all raw, so I just ate simple vegan food until I could get back on my routine again.
VW: What is your advice for those starting out on a plant-based diet?
Mimi: Start the morning with a daily green juice. Eat a big salad for lunch…fruit in between meals then have a cooked vegan dinner. Don’t beat yourself up if you are not eating all raw just keep moving in the right direction. Move at your own pace and be easy on yourself. One day you will realize you feel better after you eat a raw vegan meal than a cooked meal, and the transition will become easier.
VW: How are you spreading the message about plant-based eating (books, DVDs, etc.)?
Mimi: I’m a chef and the author of LIVE RAW, and my newest book LIVE RAW AROUND THE WORLD will be released July 2013. I’m active on my Facebook and social network pages. I film YouTube videos preparing some of my recipes, and I do speaking engagements and interviews around the world.
VW: What are your plans for the future?
Mimi: Honestly, I have none. I try to live in the moment. I could have never planned the life I have now, so I’m open to see what the future brings. It’s exciting not planning and I love surprises.
